We start off with the best quality whole Atlantic salmon.  Our experienced buyers only purchase from Scottland and Norway.  We choose Atlantic salmon for it's larger size, rich robust flavors, oils and texture.  Our customers know this is the best for hot or cold smoking. 

The cold smoking process begins with the salmon fillets placed in a brine solution of special ingredients to enhance the taste.  After a few days in brine the salmon is placed on racks for drying.  Once the salmon properly dried the fish enters the smoker for the cold smoking process.  The salmon is removed from the smoker, chilled and it's on to packaging and off to your deli's, caterers and supermarkets within the next 24 hours for the freshest product available.
